Tonight, we enjoyed some sundae's in our house. They were mighty simple & mighty tasty. I didn't actually make anything for them, just pulled some ingredients out of the freezer & pantry & the indulging began. I've long thought it would be fun to do a birthday party for one of the boys called "Sundae's on Sunday," but it seems every time a birthday rolls around, coconut (or some other key ingredient) isn't tolerated. Perhaps Ry's birthday in January will finally be the one to take this title. I hope so, I think it'd be fun & he'd be so excited to have such a spread of treats before him.
To enjoy, you will need:
1-pint Luna & Larry's Coconut Bliss ice cream (or other safe, dairy-free version)
Scoop your desired amount of ice cream into a bowl & top with as much chocolate chips & chocolate syrup as your taste buds can handle, & be sure to eat it with a smile on your face because, yes, it is that good!
Other topping ideas:
- fresh fruit (peaches, strawberries, blueberries, raspberries, etc.)
- shredded coconut
- raspberry or strawberry jam
- almond pieces or other tolerated nuts (if tree nuts are ok)

Hopefully next time we treat ourselves, I am quick enough to snap a photo. There was absolutely no sense in trying tonight, the boys were hovering over the bowl the entire 1-minute process!
