Simple Chicken Stiry-Fry

1 cup uncooked jasmine rice

2 zucchinis

1 medium onion

2 carrots

1-pound mushrooms

1-pound chicken breasts

2 tablespoons extra virgin olive oil

1 tablespoon minced garlic

sea salt, to taste

Cook jasmine rice according to package directions. Dice vegetables and chicken. Heat oil in large saucepan, add garlic and veggies and saute for a few minutes. Add chicken and salt, cook until done. When rice is done, stir into veggies and chicken until well-mixed. This is tasty just like this, but you can also add coconut milk, hot sauce, wheat-free soy sauce or amino acids if you want more flavor.
