Our fridge is looking pretty bare- down to a few essentials and little produce. This doesn't mix well with hungry kids, but with this quick and easy meal, they're fed and happy! I chopped up a pack of jalapeño meatballs (Aidells brand, but any sausage would do), one bunch of asparagus and a few carrots. Melted some palm shortening in a saucepan, added the meat and veggies and sautéed until about done, then threw in leftover cooked noodles for a few minutes. Easy-peasy. Lunch is served. Enjoy!
