Poi (blended taro root)
I made poi today for Rylee and he's really enjoying it! It is a traditional Hawaiian food.
1 taro root
1 bowl of water, with a dash of sea salt
sea salt, to taste
Cut the taro root up into chunks and soak for 5-10 minutes in the water with sea salt. Bring water to a boil, add taro root and cook until soft, about 15 minutes. Blend in the vitamix until smooth.* I topped Ry's with coconut oil and sea salt. Eat and enjoy!
*The recipes I found called for mashing it up with a pestle, but I opted for my vitamix. I'm not sure if the consistency makes it "untraditional," but it is a good mashed potato alternative for us!
