Pad Thai

Another delicious dinner that is free of some common allergens. While this may not be the most traditional form of pad thai, it sure is good!

Pad Thai

1 pack pad thai rice noodles

1-lb. pork, chopped

3 tablespoons olive oil

2 tablespoons garlic, minced

1 small onion

1 pack of tofu, diced

1 red bell pepper, diced*

1 bunch of cilantro, chopped


8 tablespoons fish sauce

4 tablespoons sugar

4 tablespoons Bragg's amino acids

Soak noodles according to the package directions, usually about 45 minutes (I've found that actually boiling them for 5-10 minutes works just as well, if not better). Mix sauce ingredients together, set aside. Cook pork in olive oil and garlic, add onions, tofu and bell pepper and saute. Add sauce, mix well. Stir in noodles and cook on low until noodles are soft. Sprinkle with cilantro before serving.

*If you are avoiding nightshades, it is fine to omit the red pepper, it gives the meal some color, but it will still taste good without it. **If you are not avoiding legumes, one bunch of bean sprouts are good added to the meal. Put them in with the onions, tofu and bell pepper
