Mayonnaise

It's surprisingly simple to make mayonnaise at home; usually with some trial and error, but once you get a successful batch, it's hard not to make it at home. Plus, good mayo is really expensive, which is good motivation to making your own. I haven't tried making it with chicken eggs, but the duck eggs are great. It's rich and flavorful. I'd recommend using light olive oil for less of an oil flavor. Enjoy!

Mayonnaise

1 egg

2 tablespoons apple cider vinegar

1/2 teaspoon dried mustard powder

1/2 teaspoon sea salt

3/4 cup light olive oil

other spices to taste

Directions

1. In your blender, put your egg, vinegar, mustard powder, salt and other spices you'd like to use.

2. Turn your blender on and go straight to high or level 10 on the Vitamix. Stay there for 10 seconds, then turn down to 6 on the Vitamix or medium. Blend for about 30 seconds then add oil.

3. Add oil while blender is running, in a slow and steady stream. Do not rush this part. It should start emulsifying. Once oil is added, you can blend for another 30 seconds or so to thicken more. Otherwise shut off the blender and enjoy!
