Mango Sorbet

Tonight I made some mango sorbet for an after-dinner treat. I used my Vitamix, which creates an amazingly smooth texture- I love it!

Mango Sorbet

1-1/2 mangoes*

1 cup ice

1 tablespoon agave nectar

1 tablespoon coconut milk*

Place all the ingredients in the blender and start blending on low, gradually increasing the speed, until you reach your desired consistency, about 3-5 minutes. Pour into a cup or bowl and enjoy!

I've been collecting neat glass jars lately, the ones for sundaes, and I put this in one for Rylee. It makes it just a little bit more special for him!

*I think this should work fine with any combination for fruit, mangoes are what we had in the fruit bowl tonight. I bet strawberries would be really good, but we're not giving Ry any right now. Actually, any berry would probably be delicious!

**I wanted to see if this would make it creamier, I'm not sure if it did or not, since I haven't tried it without, but I am sure it taste great if you wanted to leave out the coconut
