Halibut Olympia and Cabbage Salad
1-lb. halibut fillet
1/2 cup grapeseed Vegenaise
2 tablespoons olive oil
2 teaspoons salt and pepper
1 tablespoon minced garlic (or more to taste!)
Preheat oven to 350 degrees. Slice onion thinly and place half in the bottom of a glass pan. Drizzle with half of the olive oil, half of the salt and pepper and minced garlic. Lay halibut fillet on top of the onions. Spread the Vegenaise on top of the fillet, top with remaining onions, olive oil and salt and pepper. Bake at 350 for about 20-25 minutes, until halibut is flakey, but not dry. *It also tastes really good to add sliced red and yellow bell peppers to the sliced onions.
1/2 head of cabbage
1/4 cup rice vinegar
1 tablespoon olive oil
salt and pepper to taste
Thinly slice cabbage, carrots, onion and radishes. Place in a bowl. Mix together rice vinegar, olive oil and salt and pepper to taste. Pour over the vegetables, mix together well and enjoy! I really wasn't sure what to call this salad, so I kept its name as simple as it is. The flavor is great, especially as we head into summer- it's light and refreshing!
