I feel like I should be sitting here, writing about how summer has come & gone. But to be honest, it doesn't quite feel like summer ever came. We had some gorgeous days in June, but it's been wet & cold the last six weeks. The woodstove has been roaring a lot (too much) & even the kids are confused. They're still waiting for summer to start. We are starting school soon, though! Ry will be in kindergarten, hopefully enjoying it. We never did preschool, so I know it'll be an adjustment for all of us. I think a good one. Ry is eager & excited. He tries to play it off, like he doesn't really care or doesn't want to go, but I think secretly he can't wait. He's feeling pretty big at 5-1/2 & is probably just about ready to take on the world, so we'll start with kindergarten. I'm just trying to get my ducks in a row with the allergies, so we are prepared, as well as his teacher & school. They've been great so far & I know it's going to be a new adventure for all of us. On that note, I've been trying out some new smoothie recipes. I am trying to come up with some quick & easy (& healthy!) breakfast, lunch & snack ideas, as we are pretty used to being on our own schedule, & that's probably going to be the biggest adjustment we'll face here in a couple weeks.
I found this recipe on Pinterest, it originally comes from Martha Stewart. It was an easy fix to make dairy-free; I also stuck with the strawberry & banana combination, but you could easily replace the strawberries with something else. It's delicious- flavorful & creamy. Covey proclaimed "it smells like lollipops!" Ry was a bit concerned because he wanted it to taste like lollipops, the smell alone wasn't going to cut it...either way, they both enjoyed it. Not quite as much as I did, silly boys. You could also use a different dairy-free yogurt or milk. We've been really happy, though, with the So Delicious Coconut Yogurt & milk. One of these days I'm going to master making it! I've had a couple good, failed attempts, so I need to work up the courage to try it again :)
1-pound frozen strawberries
1-1/2 cups coconut vanilla yogurt
1/4 cup coconut milk
2 tablespoons honey
1. Place all ingredients in your Vitamix (I did them in the order I listed them).
2. Turn Vitamix on & slowly increase speed, once it's blending together, turn on high to blend smooth.
3. Blend for about 30 seconds, then pour & enjoy!
