Fresh Pasta Salad

1 bag brown rice spiral noodles (I like Tinkyada)

1 large tomato

1 zucchini

1 red onion

6 fresh basil leaves

1 tablespoon minced garlic

4 tablespoons extra virgin olive oil

sea salt, to taste

Cook noodles according to packaging directions. Dice the tomato, zucchini and onion. Saute the zucchini and onion in 3 tablespoons olive oil and garlic. When noodles are done, drain water and mix with onion and zucchini, then add tomatoes and fresh basil. Top with 1 tablespoon olive oil and sea salt, to taste. If you don’t want a vegetarian meal, dice and cook 1-2 chicken breast in olive oil and salt and add to the pasta.
