A friend gave me this awesome recipe for coconut haystacks, super easy and super yummy, allergies or not! So here it is:
3/4 C. Coconut Oil, melted
1/2 C. Honey
1/2 C. Carob about
3 C. shredded coconut
Mix the first three ingredients, then add the coconut. Shape into balls and place on cookie sheet, lined with wax paper. Place in fridge, until cooled. Try not to eat at once! I have omitted the vanilla because we can't do corn (actually we passed it on last testing but haven't trialed it yet) and I am not sure how much the recipe calls for, but they still taste great corn-free!
