Coconut is a food we got back recently. It's been about eight months since we last trialed it (unsuccessfully), but for the last month or so, it's been great! Here in Hawaii I have found two products I am very excited about. So Delicious Coconut kefir (probiotics, yes!) and So Delicious minis Coconut vanilla ice cream bars, "chocolate" covered (carob). Both passed, yippee, which hopefully means Ry will also tolerate their yogurt. I love being able to get the probiotics into him, we use an extremely high dose (100 billion) powdered one, but I am never sure how much of it he actually gets. Also, a friend recently gave me an awesome recipe for coconut haystacks, super easy and super yummy, allergies or not! So here it is:
3/4 C. Coconut Oil, melted
1/2 C. Honey
1/2 C. Carob
about 3 C. shredded coconut
Mix the first three ingredients, then add the coconut. Shape into balls and place on cookie sheet, lined with wax paper. Place in fridge, until cooled. Try not to eat at once! I have omitted the vanilla because we can't do corn (actually we passed it on last testing but haven't trialed it yet) and I am not sure how much the recipe calls for, they still taste great and I haven't tried them with vanilla.
