We were playing around with arrowroot recently, as a thickener, and we came up with a really easy, really yummy pudding recipe. I am ashamed to say this was devoured quickly. I know it was too much sugar for Ry in one day, but the poor kid never even had pudding before, so I let him splurge- he deserved it!
6 Tablespoons Arrowroot powder
6 Teaspoons Carob powder
3/4 Cup of Organic Sugar
4-1/2 Cups of Coconut Milk
1. Mix arrowroot, carob powder, and organic sugar together in saucepan.
2. Add 1 Cup of coconut milk to mixture and mix until smooth.
3. Add the rest of the milk, then stir continuously over medium heat, until boiling.
4. Pour into bowl and refrigerate until cool.
Next time I make this, I want to put them into those clear glass cups, used for ice cream sundaes, and top with coconut whip cream and carob powder. It would be such a pretty treat.
