"Cheesy" Cauliflower

For dinner I made the "cheesy" cauliflower that I made for lunch, only this time I used broccoli. Here's the recipe:

"Cheesy" Cauliflower

1 large head of cauliflower or broccoli

4 Tablespoons arrowroot flour/starch

1-1/2 Cups coconut milk beverage (So Delicious brand)

3 Tablespoons coconut oil sea salt, to taste

Chop the broccoli up into very small pieces. Heat up the coconut oil, add broccoli and cook for about 7-10 minutes, until tender. While cooking, mix the arrowroot flour/starch with the coconut milk until smooth (I used So Delicious coconut milk, not canned coconut milk, which has the consistency of soy or dairy milk; I'm sure canned would be fine, though). When the broccoli is about done, add in the coconut milk/arrowroot mixture. Stir until thickened, about 5 minutes. I turned it off when it started to look cheesy- it was really thick and stringy. Add sea salt to taste.

Tonight, I decided to throw it in my Vitamix, so Coven (our younger son) could also eat it. Rylee decided he wanted his blended too and it was a great idea! It tasted like Cream of Coconut Broccoli soup. It was a hit among all its taste testers, especially the ones who count- my boys!
