A quick note on a tasty butter replacement- pure coconut oil! It tastes great spread on gluten-free bread, rolls, scones, cinnamon rolls, etc., especially with jam or honey on top. It will melt, if you want it to (I think it melts at 76 degrees). There are other butter alternatives, such as Earth Balance spread, but coconut oil is the only thing for us that is free of everything it needs to be free of (including dairy, corn, and soy). If you like coconut, it's worth a taste-test! It also works great as a cooking oil, we use it a lot, as well as palm shortening.
