Burritos with Sauteed Veggies

Mexican food is one of our favorites. We eat a lot of tacos and burritos- they are easy meals to make dairy-, egg- and gluten-free. Recently, we've been eating a big serving of sauteed veggies in our burritos. It's become a favorite of all ours- adding lots of flavor. Here's a simple recipe for a delicious dinner.

Burritos with Sauteed Veggies

1-pound burger (we use turkey or venison)

1 tablespoon olive oil

1 tablespoon minced garlic

1-2 teaspoon cumin (or to taste)

1/2 teaspoon sea salt

1/8 teaspoon chili powder

1 onion, chopped

1 zuchinni, chopped

1 yellow squash, chopped

1 red bell pepper, sliced

1 tablespoon olive oil

sea salt, to taste

1 pack gluten-free tortillas or hard shell tacos (we use Food for Life Brown Rice tortillas) or sometimes we layer everything onto corn chips

Topping ideas: avocados, black olives, chopped tomatoes, chopped onions, lettuce & fresh salsa.


1. Heat 1 tablespoon olive oil over medium heat. Add garlic and chopped onion. Cook for 3-5 minutes, allowing onion to soften & become translucent. Add burger.

2. While burger is cooking, add cumin, sea salt and chili powder.

3. In a separate pan, heat 1 tablespoon olive oil over medium heat. Add all chopped veggies & sautee until done, about 10-15 minutes.

4. When burger is completely cooked, grab your tortilla or hard taco shell and fill it up. Add cooked meat, top with sauteed veggies, then add your selection of toppings.

5. Toppings to add: black olives, avocados, chopped tomatoes, lettuce, chopped onions, salsa.

6. Additional goodness: you could also make rice, either for a sidedish or filling, & if you're tolerating legumes, you could make black beans.
