This morning I am enjoying an old favorite- our blueberry buckwheat pancake recipe, revised as buckwheat waffles. I topped mine with coconut oil, sliced strawberries & real maple syrup. Ry chose chocolate syrup & coconut oil. They sure are tasty!! This recipe makes about 3-4 large waffles (4-squares).
1 cup buckwheat flour
1/2 cup brown rice flour (sorghum would probably also work, but I’ve never tried it)
1/2 cup tapioca flour
1 teaspoon guar gum
2 teaspoon baking soda
1/2 cup agave
2 tablespoon applesauce
6 tablespoons extra virgin olive oil
1-1/2 to 2 cups water
1 teaspoon apple cider vinegar
topping ideas: sliced strawberries coconut oil real maple syrup chocolate syrup powdered sugar jelly
1. Turn on waffle iron.
2. Mix together all dry ingredients in a medium bowl.
3. Add wet ingredients, mix until smooth.
4. Pour into greased waffle iron and cook until green light comes on (or whatever signal your iron gives you).
5. Top with coconut oil (butter replacer) and your choice of sliced strawberries, chocolate syrup, maple syrup, jelly, powdered sugar or whatever else you like!! Enjoy & happy Mother's day!
